1. Put vegetables, oil, and vinegar into a large zip-top plastic bag and shake well to coast. Set aside for 1 minute or 1 hour.
2. Sprinkle filets with salt and pepper, then place them on a medium-hot grill pan. Turn after 3 minutes, then cook for 3 minutes more for medium-rare.
3. Turn filets again, and slide them to side of pan. Add vegetables. Cook for 3 to 5 minutes more, stirring frequently.
