Nibby Banana Bread
Preheat over to 350F. Grease 9x5 inch loaf pan
Mix the dry ingredients together (including coconut). Cream the butter and beat in the egg yolks and bananas. Separately, beat the egg whites just below stiff peak stage. Stir the butter mixture into the dry ingredients just enough to combine. Gently stir in the vanilla, nibs and chocolate.
Pour the batter into the loaf pan and bake for 45 to 60 minutes. A toothpick inserted into the center of the bread will come out fairly clean, but because of the bananas this bread will remain moister than moist. Do not overcook. Cool on a rack for 15 minutes before removing from the pan.
