In a medium bowl, whisk together the garlic, lemon juice, red wine vinegar, Dijon mustard and Worcestershire sauce. Add the mayonnaise, Parmigiano-Reggiano, salt and pepper and whisk until well combined. Taste and adjust to your liking.
THOROUGHLY rinse a head of romaine, dry as much as possible, chop up (discarding the very end), dry off some more using paper towels or a clean kitchen towel (I will put a paper towel or towel inside of the bowl I'll be using and dab off the excess water that way). Begin with about two tablespoons of dressing and mix with the salad. Add croutons on top (or toss with the salad if you want that flavor on the croutons). Add more cheese on top if desired.
