Made with brown sugar and rolled oats, these pancakes taste like soft oatmeal pancakes. Plus, the oats pack the extra nutrition with each bite.
In a small saucepan hear milk until hot; remove from heat. Stir in rolled oats. Cover and let sit for 5 minutes.
Meanwhile, in a medium bowl stir together flour, brown sugar, baking powder, salt and cinnamon. Make a well in the center of the flour mixture (for liquid ingredients).
In a small bowl, stir together egg, oil and vanilla. Add egg mixture and oats mixture all at once to flour mixture and stir until combined.
For each pancake, pour about 1/4 cup of batter onto a hot, lightly greased griddle or heavy skillet. Cook over medium heat about 4 minutes or until pancakes are golden brown, flipping once when pancakes have bubbly surfaces and edges are slightly dry.
