An easy to make, rich syrup with a light caramel flavor. Great for serving over pancakes, waffles, french toast, spice cake, ice cream, or whatnot.
Combine buttermilk, butter, sugar, corn syrup and baking soda in a large heavy-bottomed saucepan set over medium heat. Stirring continuously, cook until the sugar dissolves and mixture foams to a boil. Cook, stirring frequently, until mixture begin to take on a golden amber color, about 7 to 8 minutes. (The mixture will froth and foam, double in volume, and then gradually subside.) Remove from heat, stir down and add vanilla. Mix until all foam and bubbles disappear. Transfer to a heatproof container and let cool. Serve warm. Store in the refrigerator for up to 2 weeks, reheat before using.
Note: Do not leave syrup unattended while boiling. Keep whisk in pot and stir frequently.
Combine all the ingredients, except for the vanilla, in a large, deep, heavy-bottomed saucepan.
