Whip up dinner quickly in this one baking sheet recipe.
1. Preheat oven to 375 degrees F. Place chicken on a clean work surface and cover with plastic wrap
2. Using a meat mallet, pound chicken pieces to an even 1/2 inch thickness
3. Arrange on one large rimmed baking sheet
4. Arrange potatoes and carrots in a single layer on second sheet
5. Drizzle the chicken with 1 TB oil; 1 ts coriander; 1/2 teaspoon of salt and 1/4 ts pepper
6. Repeat 5 for the vegetables
7. Bake for 15 minutes
Meanwhile, whisk lemon juice, shallot, mustard, honey and the remaining 2 TS oil, 1 ts coriander, 1/4 ts salt & pepper in a small bowl
- Remove the pans from the oven, switch the oven to broil. stir potatoes and carrots, arrange asparagus in the center of the pan
- Spoon the lemon juice mixture evenly over the chicken and vegetables
- Broil until the chicken and vegetables are lightly browned, asparagus is tender-crisp
