1. Dice onion. Mince jalapeno. Heat large drizzle of oil in pot over medium-high heat. Add onion and garlic. Add jalapeno to taste. Cook, stirring occasionally until softened for 5-7 minutes.
2. Add sausage and Southwest spice to pot, browning until meat cooked through for 6-8 minutes. Add flour and stir to combine.
3. Add 2 cups of chicken stock (for 4 servings), salt and pepper. Bring to boil then reduce heat to medium. Simmer for 7 minutes. Stir in beans with liquid. Simmer 3-4 minutes more.
4. Season with salt and pepper. Top with sour cream and salsa.
