I have fond memories of this recipe.
Pour some oil into a large skillet. Add onions and garlic and saute until limp. Add remaining vegetables and other ingredients except for cheese and simmer for 10 to 12 minutes until vegetables are cooked but al dente. Add cheese and stir.
Place in burrito tortillas and roll. Warm in oven approximately 15 minutes. Serve with more cheese, avocado, sour cream, etc. as desired.
