Excellent with a fresh fruit salad. For the diet conscious serve with low fat yoghurt with a little sugar and vanilla essence added
Cook whole oranges in water, slowly for an hour. Allow to cool. Quarter the oranges with peel still on. Take out the white string pith. Pulp oranges with peel.
Separate eggs. Beat whites till stiff. Gradually add sugar beating continually. Add yolks gradually, beating continually. Fold in sieved ground almonds grandually. Add essence. Fold in orange pulp grandually.
Bake in oven at 180 degrees for 45-50 mins.
