Suggest a better description• Prepare ½ lb orzo as package directed
• Put shrimp in colander and rinse
• In a big bowl, combine ¼ cup diced sundried tomatoes in oil, a couple big handfuls of shredded baby spinach and ½ cup crumbled feta.
• When the orzo is finished drain and rinse with cold water.
• Drain well then toss with feta, tomatoes, and spinach
• Toss in some olive oil and salt to taste.
• Heat oil in skillet toss shrimp with lemon zest, salt, and pepper.
• Cook shrimp less than 3 minutes
• Serve on top of orzo salad
