Italian sausage baked with peppers, onions, potatoes, and tomatoes
Preheat the oven to 400 degrees. Spray a baking dish with cooking spray, place potatoes in a single layer. Place peppers and onion on top of potatoes. Mix dry seasonings together and sprinkle on top. Then pour tomatoes and water mixed with vinegar on top of that. Slice Italian sausage in halves and place on top of vegetables. Cover pan with foil. Bake at 400 degrees in center of oven for 1½ hours, remove foil and bake 1 more hour; or until sausage is nicely browned. Remove from oven and stir before serving.
