Suggest a better description1. Salt eggplant discs liberally and set aside for 10 minutes. Brush off excess
salt and pat dry. Drizzle with oil.
2. Combine the lamb, onion, garlic, cumin and coriander in a large glass bowl.
Add the almond meal and egg, and stir until well combined. Season with salt
and pepper.
Divide mixture into 8 small or 4 extra large patties. Chill in the fridge for
10 minutes to set.
Heat a griddle pan to high heat. Cook patties for 5-6 minutes each side unti
golden brown. Set aside, covered. Place eggplant on griddle pan and cook
until softened (about 3 minutes each side).
5. To assemble the burgers place a slice of eggplant on a plate. Top with a
lettuce leaf, pattie, Homemade Tomato Sauce, tomato, pickled cucumbers,
Super Sauerkraut and top with another slice of eggplant. Serve.
