This is a Jamie Oliver recipe slightly tweaked to suit paleo and primal eaters. This is a staple dinner in my house. We cook it at least once a week. This recipe serves 4 people, so if there are two of you, follow the whole recipe & leave half to warm up for lunch tomorrow.
Turn on your oven to 180C/350F/Gas MK4
Season the chicken thighs all over and fit them snugly into an oven proof dish or pan
Slice your tomatoes as you prefer, make sure you have a variety of colour and chops, halve some, quarter others. Spread them over the chicken in a random fashion.
Add the chopped chilli, garlic and basil into the pan
Add a glug of your chosen oil, if using coconut oil, liquefy it first by gentle heating.
Mix gently to coat the food in oil
Push the tomatoes underneath the meat where you can, leaving the chicken at the top
Place in the oven and cook for approx 90 minutes - turning the chicken over after 45 mins
The chicken should look nicely charred (crispy) on top before removing to eat.
For the sweet potato cubes, add a tablespoon of cooking oil and a knob of butter (if you like)
Cook over a medium heat for approx 10/25 minutes until the cubes are nicely browned.
Serve.
