Season chicken. In large pan, over medium-low, caramelize onions with 2 tbsp butter and salt and pepper, about 20 minutes. Remove from pan.
In separate pan, over med-high, sear chicken in 3 tbsp butter. Brown both sides. Remove from pan.
Deglaze pan with broth and scrape. Simmer 5 minutes. Reduce to low, add cream, vinegar, mushroom, and salt and pepper. Simmer 10-15 minutes. Add chicken and simmer 10-15 minutes until cooked through. Remove chicken. Add parm and onions and stir into sauce.
Serve atop chicken.
