Saute 1/2 garlic in olive oil. Add pepperoni to oil and fry, then add ground beef and chopped sausage and fry until brown. Add tomato paste, tomatoes and 2 cups of water to the meat. Mix in 1/2 the spices and, salt, and simmer for 1 hour. Then add the other half of the spices and the wine, simmer for additional 15 minutes. (THIS SAUCE CAN ALSO BE USED AS A SAUCE FOR ANY PASTA)
In a separate bowl mix the remaining black pepper and parsley with the cheeses. Cook noodles in quarts salted boiling water for 7 minutes.
Prepare the lasagna in a large (12"x18"x3") or equivalent volume in smaller pans. Begin with a thin layer of sauce to grease the pan. Follow with a layer of noodles-cheese-sauce-noodles-cheeses-sauce.... and continue until the ingredients are used up. End with a layer of noodles topped with sauce.
