A quick, light garlic, lemon, pasta dish with Shrimp or Chicken.
Add oil and butter to large fry pan w lid.
In Sauce Pan bring a little oil and salt to boil.
Add pasta to water and cook to Al-dente. Save back 1/4 cup pasta water.
While cooking pasta, add onion, green onion, garlic to hot oils in fry pan. Cook garlic & onions 2 or 3 minutes then add shrimp. Add crushed red pepper, lemon juice from 1 lemon and zest, also spinach if using. Also add parsley if using. Continue to heat for about 1 or 2 minutes. Take from heat. Add pasta and 1/4 cup pasta water. Add Parmesan cheese, salt and pepper. Remember Parm is salty. Stir and serve.
