Rice Primavera
1. Weigh rice into 12 x 20 x 2" pan.
2. Pour boiling water over rice. Stir. Cover pans tightly with aluminum foil and bake at 350F for 1 hour. Remove from oven and let stand for 5 minutes. Fluff with fork.
4. Combine yogurt, milk, cheese, pepper, and garlic. Add to rice and toss to coat.
5. Cook vegetables until al-dente and add to rice mixture. Toss to coat. Heat.
6. Stir in parsley.
