Suggest a better descriptionBring large pot of water to boil. Score the peached with a cross on the bottom and immerse in the boiling water just enough to get peeling to come off easily. Cut them in half and remove the pit.
Cover deep sided pan with about 1 inch of water. Add the peaches an allow to simmer over medium heat until softened;
about 20 min. Do NOT boil them.
Peaches are too fibrous to pass through a sieve so add them to a blender, food processor or stick immersion blender.
Process them to the consistency you want.
Return them to heat and add lemon juice and sugar. Heat until sugar is dissolved, about 10 min.
I used jars and then froze them. can also use freezer bags
