VITAMIX RECIPE
- Preheat oven to 375 degrees. Line a cookie sheet with parchment paper.
- Place flour, sugar, bakin gpowder, soda and salt into the Vitamix.
- Select Variable 4.
- Switch machine to Start and blend for 2 seconds. Stop machine and remove lid.
- Add butter to Vitamix container and secure lid.
- Select Variable 4.
- Pulse 6 times. Pour mixture into large bowl. Stir in chocolate chips.
- Add milk, egg and peanut butter to the Vitamix container and secure lid.
- Select Variable 2.
- Switch machine to Start and blend for 10 seconds. Pour over dry ingredients. Stir just until moistened.
- Flour work surface. Scoop mixture onto floured surface and knead 5 or 6 times. Form into 1 disk, 8 inches in diameter. Cut into 8 wedges. Place 2 inches apart on cookie sheet.
- Bake 15 to 18 minutes or until golden brown and set. Do not over bake. Store at room temperature in closed container.
