Peanut Butter Cookies
1. Mix shortening, peanut butter, sugars and egg (with mixer).
2. Blend in flour, soda, baking powder, and salt. Cover and chill.
3. Heat oven to 375 degrees. Shape dough into 1 inch balls. Place 2 inches apart on lightly greased cookie sheet. With fork dipped in flour, flatten in crisscross pattern to 2 inches.
4. Bake 10-12 minutes or until set, but not hard.
5. Cool slightly before removing from pan.
VARIATION (YO-YO COOKIES for 4-5 dozen)
-Shape dough into 3/4 inch balls. Place 2 inches apart on lightly greased cookie sheet. Do not flatten.
-Bake 10 minutes or until set, but not hard.
-When cool, put cookies together in pairs with jelly or jam.
-Store in zip lock bag or plastic bowl with lid.
