you can use regular penne if you wish
1. preheat the oven to 450 degrees. spray a large rimmed baking sheet with nonstick spray. place the tomatoes on the baking sheet and spray lightly with nonstick spray. sprinkle with 1/4 teaspoon of the salt and the pepper, bake until softened, 30 minute stirring every 10 minutes.
2. meanwhile, place the vinegar in a small saucepan and bring to a boil over high heat; boil, stirring occasionaly, until reduced to about 1/4 cup, about 15 minutes.
3. cook the penne according to the package directions, omitting the salt if desired. drain, reserving 2 tablespoons of the cooking liquid.
4. transfer the pasta to a large bowl, add the reserved pasta cooking water, tomatoes olive oil, basil, and remaining 1/4 teaspoon salt and toss to combine. divide the pasta mixture among 4 plates, drizzle evenly with the vinegar and sprinkle with cheese.
