Spicy twist on a stuffed chicken breast.
Start out with two butterflied chicken breasts, lay them open and flat. Drizzle the chicken breast with olive oil and lay the pepperjack cheese out on top. Sprinkle the jalapenos and garlic over the top of the cheese. Starting at one end, roll the chicken breast and secure with toothpicks for baking.
Drizzle olive oil into a hot skillet and brown the chicken on all sides. Place the chicken into the oven at 375 degrees and cook for about 30-40 minutes. Let the chicken rest for five minutes and remove the toothpicks. Slice the chicken into one inch pieces to reveal the cheesy center.
