A popular Vietnamese recipe is Phở Bò (Beef Pho).
In a large pot, add the sliced onion and ginger. Dry roast the star anise, cloves, cinnamon stick, coriander seeds, and fennel seeds until fragrant. Add them to the pot.
Fill the pot with about 3 liters of water and bring it to a boil. Reduce the heat and let it simmer for about 30 minutes to create the broth.
While the broth is simmering, prepare the rice noodles according to the package instructions. Once cooked, drain and set aside.
Remove the beef from the refrigerator and let it come to room temperature. This will ensure that the beef cooks evenly.
After 30 minutes, strain the broth to remove the spices, onion, and ginger. Return the broth to the pot and season with sugar, fish sauce, and salt to taste.
Bring the broth back to a gentle simmer. Add the sliced beef to the pot and cook for a few minutes until it reaches your desired level of doneness. The beef should be tender and cooked through.
To serve, divide the cooked rice noodles into bowls. Top with the cooked beef slices. Ladle the hot broth over the noodles and beef, ensuring that they are fully submerged.
Garnish with fresh herbs, bean sprouts, lime wedges, and sliced chili peppers according to your taste. Serve with hoisin sauce and sriracha sauce on the side for extra flavor.
