Suggest a better description1. On a lightly floured work surface, roll each pastry sheet into 12" square, then cut into 4" squares.
2. Lightly brush lower half of each square with mustard.
3. Center a sausage on the mustard-coated edge.
4. Brush top inch with egg.
5. Roll sausage in pastry, pressing seams to tightly seal.
6. Brush top with egg, then sprinkle with poppy seeds or flaky sea salt.
7. Cut each at an angle into thirds.
8. Freeze pigs in blankets, uncovered, on a parchment-lined baking sheet until firm.
9. Preheat oven to 400 degrees.
10. Place frozen pigs in blankets 1" apart on parchment-lined baking sheets.
11. Bake until pastry is puffed and golden brown, about 25 minutes.
12. Serve warm with mustard.
