Suggest a better descriptionCut chicken into pieces and brown in oil several minutes on both sides until golden.
Drain Pineapple juice and put in saucepan. Set aside pineapple chunks for later. Mix vinegar, sugar, ginger, and salt with juice and bring to a boil. Boil 5 minutes at a low boil. Be careful of a boilover, the sugar burns!
Put chicken in 9x13 dripper pan and pour sauce over the top. Stir in 2 Tbl of cornstarch. Cover with foil. Bake at 400 for 45 minutes. Add pineapple chunks and green pepper slices. Recover with foil and bake 15 more minutes. Serve over rice.
