Suggest a better descriptionPreheat oven to 350 degrees F.
Bake the sweet potatoes for approximately 60 minutes or until soft. Remove the skin and mash the potatoes or poke with fork and cook in microwave until soft, approximately 10 minutes.
Spray a 9" pie pan with cooking spray.
Combine butter, brown sugar and maple syrup, spread evenly in pan.
Sprinkle lightly with cinnamon.
Arrange pineapple chunks or rings in single layer in pan.
In a large bowl, combine the mashed sweet potatoes, vanilla extract & brown sugar.
Place Sweet potato mixture in pan and smooth top.
Cover with foil and bake 25-30 minutes.
Let stand 1 minute.
Optional, run a knife around the edges and invert on plate.
