Arrange mushrooms and onions on a baking sheet and roast until tender, 15-20 min.
Make tahini spread by blending all ingredients together in a fd processor or high-pwr'd blender until creamy.
When mushrooms and onions are done, split pitas in half horizontally and warm slightly.
Spread generous amt of tahini spread on top half of ea pita.
Place 1/2 cup arugula, 1 mushroom cap (pat dry w paper towels to absorb any excess liquid), and 1/4 of the onion and roasted red pepper on the bottom half of each pita.
Assemble sandwiches.
