Plum crisp, good for brunch. Found on My New Roots (Jennifer)
Crust:In food processor pulse the rolled oats until they are finely ground and resemble flour. Add rye flour, popppy seeds and sea salt; plus everything to combine. Add cold coconut oil and puls until mix has a sandy consistency. Add maple syrup, puls, then slowly dribble in the cold waterjust until the dough comes together(you may not need to use all the water) empty the food processor onto a piece of plastic wrap, knead, roughly form a disc, wrap with plastic and place in the refrig for at least 30 minutes.
Filling: Pit and slice the plums, place in a bowl with flour, maple syrup, vanilla, cinnamon and lemon zest.Gently toss to coat. Set aside.
Remove dought from refrig. roll out dough, dosent have to be even (pie crust) 1/8 inch thick. Place in pie pan. Preheat oven to 375F' add filling and fold edges over filling. Place in oven and bake for 30 to 35 minutes until golden brown and crispy.Remove from heat and cool. You can serve with whip cream or ice cream.
