These are so different and delicious and just a really neat way to serve corn bread! It makes an excellent side dish for any Mexican or Southwestern meal.
1) Preheat oven to 400(F) degrees. Spray a baking sheet with non-stick spray. Prepare corn bread mix as directed adding cheese, corn, and cilantro with other ingredients.
2) Slice poblanos lengthwise and remove the seeds and ribs. Place on baking sheet and fill each pepper with an equal amount of corn muffin mix.
3) Bake 18 to 20 minutes or until a tooth pick inserted in center comes out clean and top is golden brown.
