Pork chops with a spice rub and nice sauce
Mix paprika, garlic, onion, mustard, salt, pepper and cayenne. Sprinkle the rub over the chops and let stand for 15-60 minutes. Heat olive oil in skillet. Add the chops, in batches if necessary, and brown 3 minutes on each side. Reduce heat and cook 5-7 minutes longer, until done. Transfer to platter and let rest. Add apple juice to pan, scraping up any brown bits. Bring to boil until reduced by half. Reduce heat and add mustard, worcestershire, paste. Cook for 2-3 minutes longer. Remove from hear and whisk in sour cream. Transfer chops to individual plates and spoon sauce on top. Serve additional sauce on the side.
