Basic pan fried pork chops
Coat one side of pork chop with olive oil. Season generously with salt and pepper. Heat cast iron pan over high heat. Coat bottom of pan with olive oil and add pork chop, seasoning side down. Reduce heat to medium, and coat the second side of the pork chop with oil, salt, and pepper, and cover. After approximately 5 minutes flip the pork chop and cover, after 5 minutes add approximately 1/4 cup of water, turn the heat to low, and cover. Cook until internal temperature is 145.
