Heat oil in skillet and cook apple slices on medium heat until tender. Remove from skillet and keep warm.
Cut tenderloin into thin slice about 1/2 in thick. Using meat mallet, pound them thinner. sprinkle with salt and pepper to taste.
Coat meat with flour on both sides
Cook cutlets in the same skillet until browned on both sides and cooked through. Remove and keep warm.
Add juices and herbs to pan, bring to a boil and cook for few minutes on medium heat.
Place apples over pork and pour sauce over it.
