Sliced portabella mushrooms made into fries
Preheat oven to 425 degrees Fahrenheit.
Discard stems and gills from portabella mushrooms.
Drizzle 1 tbsp oil evenly over baking sheet.
Whisk eggs until frothy, place in shallow bowl. Combine bread crumbs and Parmesan cheese in shallow bowl.
Place 3 - 4 mushroom slices into eggs, turning to coat both sides. Dip mushroom slices with bread crumbs and Parmesan cheese mixture until evenly coated; place in single layer on baking sheet. Repeat with remaining mushroom slices. Drizzle with 2 tbsp oil.
Bake for 10 minutes. Turn mushrooms and bake 5 to 7 more minutes or until mushrooms are tender and golden.
Serve with ranch dressing or your favorite dipping sauce.
