Suggest a better description1. Preheat grill to med-high heat
2. Brush sausages & onion with olive oil and place on grill. Cook until brown on all sides.
3. Put the sausage & onion into a sauté pan add wine and cook until wine is reduced. Break up the sausage into small pieces. Add the spinach, 1/2 cup water and salt & pepper. Cook until spinach is wilted. Remove from heat and stir in 2 tbsps each of basil and parsley and the cheese. Let cool slightly.
4. Heat grill to high.
5. Brush mushrooms with oil and season with salt & pepper.place on grill, top side down & cook to golden brown approx 4 mins.
6. Fill mushrooms with sausage mixture and top with slices of tomato. Season the tomatoes with salt & pepper and put mushrooms back on grill. Cook until mushroom and filling is heated through, cheese is melted and tomatoes soften (approx 5 mins).
7. Sprinkle with remaining basil and parsley.
Variation to this is the grill everything and chop up the sausage & onion and mix together with spinach while hot so it wilts. Eliminate the steps with water and red wine etc. add mozzarella as a slice to cover mushroom to melt it on grill.
