In large bowl, combine grated potatoes, onion & egg. Thicken with matzo meal as needed.
Heat vegetable oil in skillet over medium-high heat. Drop potato mixture by ladle full into pan. Fry until done.
Serve with apple sauce, sour cream & sugar on side.
