This is my dad's recipe.

Grate the potato and the onion in to a medium to large bowl.
Squeeze out am much of the liquid as you can.
Add the flour, salt, and pepper.
Mix to combine.
In a large pan, add vegetable oil until it comes up to about 1/4 inch in the pan.
Drop the potato mixture by the 1/4 cup for large pancakes (dad's way) , or by the tablespoonful for small pancakes (I prefer this way) and lightly flatten with the back of an oiled spatula.
Fry over medium heat until well browned on each side.
Enjoy hot.
