Sift together dry ingredients in mixing bowl.
Add remaining ingredients and beat until well blended (about 2 minutes).
Cook on pre-heated greased griddle, turning to brown both sides. Or fry in fat.
Makes about 10 medium pancakes.
Note: Grate potatoes just before ready to add other ingredients, as potatoes turn dark while standing.
