Mustard Vinaigrette
1. Combine wine olive oil, mustard and honey (if using) into a blender
2. Add Wine Vinegar 1 tablespoon at a time until emulsified
Potato Salad
1. Peel Potatoes if desired and cut into bite-sized pieces
2. Put potato pieces into a pot and cover with water. Add a large pinch of salt
3. Bring to a boil and then lower heat so that water gently bubbles
4. Cook until potatoes are tender (firm but not mushy - about 15 minutes)
5. Drain, rinse with cold water, and drain again
6. Toss still-warm potatoes with parsley and scallion
7. Add vinaigrette until dressed as you like
8. Taste and adjust seasoning
