1. Clean potatoes, dice, and boil until tender (DO NOT Mash)
2. While boiling, mix wet ingredients, except relish, in separate bowl with a whisk. Once well mixed, fold in relish.
3. Once potatoes are done, drain water and place in a large serving bowl with carrots, onions, eggs, and bacon.
4. Pour in wet mixture, mixing together while potatoes are still hot.
5. Chill for 3 - 4 hours covered or overnight. Serve cold.
