quick and easy, cook fritters while soup simmers
SOUP-
Place potatoes and salt in large sauce pan, add small amount of water not even enough to cover potatoes. Bring to boil and simmer til almost tender.
Add onion, butter and cook 5 minutes.
Add milk and heat through. Ladle into bowls and garnish with parsley.
CORN FRITTERS-Heat oil to 375 in electric skillet
Mix all ingredients well. Drop by 1/4c into 2 inches oil 3-4 minutes flip when golden brown and continue to cook through.
Serve immediately with warmed maple syrup.
1 1/2 C frozen corn thawed and drained can be used instead on canned corn.
