Lectin-Free

Chicken and rice classic soup combination, perfect when you're feeling under the weather or anytime you need a pick-me-up. This version delivers the same healing properties, minus the lectins. Leave out Miracle Rice if you plan to freeze.
Step 1:
In a large soup pot, heat the olive oil over medium-high heat. Add the onion and celery, and cook until tender and translucent. 5 or 6 minutes.
Step 2:
Add the garlic and mushrooms, along with the sage, thyme, rosemary, pepper, lemon zest, lemon juice, and salt. Cook stirring regularly, until tender, approximately 3 to 5 minutes.
Step 3:
Add poultry and broth, reduce heat to low and simmer for 15 to 20 minutes. Add Miracle Rice and cook until heated through, 1 to 2 minutes before serving.
