Suggest a better descriptionPre heat oven 350. Place the flour, barley, salt, yeast, and water in stand mixer with dough hook. Knead using stand mixer or food processor until a smooth round ball forms, about 5 minutes. Place in an oiled bowl, cover with plastic and let stand at room temperature about 1 hour. Then punch down and let rise again until it doubled in size again. Turn onto floured surface, and cut into 2" pieces, roll into long 15" tubes.. Once twisted, place rolling boil bath gently 30 seconds each side. Once finished remove and set on parchment paper. Sprinkle with salt. Bake for 16 minutes at 350
If using lye for the bath replace baking soda in bath with food grade lye 3% solution. Do not heat water soak pretzel for 30 seconds, sprinkle with salt then bake.
