Proof yeast with first batch of water and sugar
Mix in flour and salt; knead well; looking for a soft dough that doesn't stick too much. Titer up flour as needed.
Rise for about an hour
Bring 6 cups of water to a boil with baking soda.
Divide dough into 16 pieces and shape pretzels
Preheat oven to 450
Kettle pretzels for 1 minute at a time
Egg wash and lightly salt
Bake for 12-15 minutes
