Similar to Cochinita Pibil (uses suckling pig), this is the recipe Robert Rodriguez shares in the extra features of "Once Upon A Time in Mexico" with some spice amount conversions.
Mix spices for achiote seasoning or grind thoroughly in coffee grinder if seeds (can be put directly into blender if only using powdered spices). If you're using compressed (brick) annatto/achiote, soak 3 Tbsp in the 1/2 cup of white vinegar for the marinade, stirring occasionally until completely dissolved (do this before anything else).
Combine ingredients for marinade and blend well in blender with the achiote seasoning.
Add the juice of 5 Lemons and a big splash of the finest Tequila you can find.
Cut the pork butt into 2 inch squares and set in a large Ziploc bag.
Pour in marinade and mix around, set aside for 10 minutes.
Line deep pan with banana leaves (aluminum foil if necessary) then pour in pork and marinade. Cover with more banana leaves and wrap it up. Cover the whole pan with aluminum foil very tightly so no steam gets out.
Roast for 4 hours at 325 degrees and serve over rice.
Don't over-complicate this one.
