Combine the dry ingredients in a large mixing bowl and stir with a wire whisk. Combine the liquid ingredients in a blender and process until smooth. Pour the liquid ingredients into the dry ingredients and stir until combined. (do not over mix)
Mist a nonstick skillet with nonstick cooking oil spray and set over medium heat. Drop the batter into the skillet using 1/3-cup measuring cup. Cook until small bubbles appear on top, about 2 minutes. Flip the pancakes and cook until the bottom is golden, about 2 minutes. Remove from pan, repeat with remaining batter, and serve with pure maple syrup.
