For cranberries, if using:
Place cranberries in a large bowl; set aside.
In a medium saucepan, bring 1 cup of sugar and the water to a boil and whisk until the sugar has dissolved.
Remove pan from the heat and allow to cool for 5 minutes.
Pour sugar syrup over the cranberries and stir.
Let the cranberries sit at room temperature or in the refrigerator for 6 hours or overnight (ideal).
Drain the cranberries from the syrup and pour 1 cup of sugar on top.
Toss the cranberries, coating them all the way around.
Pour the sugared cranberries on a parchment paper and let them dry for at least 2 hours at room temperature.
You’ll have extra, but they’re great for eating or as garnish on other dishes.
For the pastry leaves, if using:
Prepare egg wash: 1 large egg beaten with 1 tablespoon milk.
On a flour coated surface, roll out second pie crust.
Cut leaf shapes using cookie cutters.
Lay leaves out on a parchment lined cookie sheet.
Brush each leaf with egg wash.
Bake at 375 for about 10 minutes - until nicely browned.
For the pie:
Preheat oven to 375.
Prepare egg wash: 1 large egg beaten with 1 tablespoon milk.
Whisk the pumpkin, 3 eggs, and brown sugar together until combined.
Add the cornstarch, salt, cinnamon, ginger, nutmeg, cloves, pepper and cream.
Whisk until everything is combined.
Pre-bake the pie crust according to package instructions or about 10 minutes.
Pour pumpkin filling into pie crust.
Brush crust edges with egg wash.
Bake until done - about 50 to 60 minutes. (after 25 minutes or so, use crust shield)
