Frontier's Bac'Uns layered between two layers of quinoa and egg white 'batter' in egg/muffin rings results in a very tasty and healthy bacon-flavored breakfast cake. The cakes are browned on both sides in butter-flavored cooking spray, then topped with small amount of butter and sugar-free maple syrup. This recipe calls for ingredients to make three 4-inch cakes.
Bring water and quinoa to boil in saucepan over high heat; cover, reduce heat to low, and simmer for 13 minutes. Remove lid and, if needed, let simmer until water is almost all evaporated but quinoa is still moist. Remove from heat and let stand for about 10 minutes to cool (to avoid cooking the egg whites when quinoa is added).
Add egg whites and salt to a small bowl. Stir in the quinoa and mix well.
Place three 4-inch diameter egg/muffin rings in skillet large enough to hold rings in a single layer. Spray the rings and skillet with butter-flavored non-fat cooking spray (especially the inside surface of the rings so the cake will release easily when ready to turn cakes over). Place the skillet over medium-low heat for about 2 minutes.
Using a spoon, place about 1/6 of the quinoa mixture in each of the egg/muffin rings. Add 1/3 of the Bac'Uns to each ring, evenly spread over the quinoa. Then add remaining mixture to the rings, distributing evenly. Cook until cakes start to firm up and can be turned over without breaking apart, and the cakes are golden brown and crisping up a little (by tapping the sides of the rings, you will be able to tell when set up enough). Using tongs, gently lift the rings from the cakes. Turn over gently with a spatula and let cook until the cakes are golden brown on both sides.
Remove cakes to serving plate, and spread butter on tops. Add syrup and enjoy with a good cup of strong, hot coffee.
