Quinoa, Sweet Potato and Black Bean Bowl
Cut sweet potato into square inch chunks. Lightly shake in olive oil and salt. Spread out on cooking sheet and bake on 350 for 30 minutes.
Make 2 cups cooked Quinoa.
Heat olive oil in skillet. Add onions and garlic. Once hot, add black beans, bay leaves, and spices.
When all is heated up, mix it up and eat it
