Suggest a better description1. Split the sponges and fill with raspberry jam. Cut each into three and place in a dish. Mix the sherry with 4 tablespoons peach juice from the can. Spoon over the sponges and soak for 15 minutes.
2. Put the peaches and most of the raspberries in a serving dish. Arrange the sponge on top.
3. Gradually mix the custard into the mascarpone until smooth. Spoon over the sponge and level on top.
4. Whip the cream and spread over the custard layer. Decorate with chocolate shavings and the remaining raspberries. Chill until ready to serve.
