Suggest a better descriptionPreheat the oven to 180c
Rub the chickens all over with oil, salt and pepper. Place a bay leaf and an onion in each cavity and place upside down in a roasting tray
Roast the chicken for about 70-90 mins (this is quite a slow temperature for roasting) until the leg pulls away from the rest of the bird with ease and the juices run clear
Turn over for 20 mins to brown the skin turning the oven temperature up if need be
Leave the chickens to rest for 15 mins and then serve with the side dishes set out in your weekly meal planner
Keep plenty aside for other meals during the week
